There is a whole lot of stuff going on around here. First, I have been asked to do not one…but TWO cooking demonstrations at this year’s Nashville Home Show. Cooking demos are always so much fun for me, I really enjoy teaching people to cook a dish! Brrrr It’s cold outside! We are in the middle of winter and the temperatures are bone chilling so I decided I wanted to make a hearty soup for dinner tonight. There is nothing better than a big bowl of soup to warm your soul. I am very much a lover of all soups and it’s not uncommon for me to order soup in the summer when the temps are super high. This is my favorite recipe for white chicken chili and it is super easy to make. I love that this recipe calls for canned white beans instead of dry which makes this recipe perfect for a busy weeknight meal.

Who is ready for a quick and delicious meal? I know I am after all the holiday cooking. I have made this recipe a lot and it is always one of my quick go-to dinners. I love that you can use just about any meat you have on hand i.e. ground beef, ground turkey, ground chicken, shredded chicken..you get the point. I made this particular one with shredded chicken and it did not disappoint. Next time I may try it without meat and maybe add some pinto beans! I hope you enjoy this dish as much as we do. I got the idea for this casserole from the very inspiring Pinterest. I happened to see a recipe that had chicken and pasta that was topped with bacon, I didn’t click on the image to get the details I just made a mental note of what some of the ingredients were so I could build my own recipe. I love to create new recipes from just seeing a picture without knowing the actual recipe. This casserole was the result and let me tell you it was a huge hit! The sauce was so full of flavor I will be making this casserole time and time again.
Chicken stock is an absolute must in my pantry, I use it in so many dishes. I often use chicken stock instead of water when cooking rice and grits it really adds so much flavor to them. I also love to use homemade chicken stock when I make chicken noodle soup it really makes it something special. If you have never made chicken stock before then you are in for a real treat, It is so easy to make and so delicious. I use the leftover chicken bones when I make a herb roasted chicken. You can also use a whole uncooked chicken but I prefer using just the remaining bones and skin from one I have already roasted it’s just personal preference either way it will be delicious!
