There is a whole lot of stuff going on around here. First, I have been asked to do not one…but TWO cooking demonstrations at this year’s Nashville Home Show. Cooking demos are always so much fun for me, I really enjoy teaching people to cook a dish! The reps at the Nashville Home Show were kind enough to supply me with a few sets of VIP Passes to the show! Often when you think lasagna you think of how hard it is to make and how many ingredients it takes, right? Well Red Gold has been doing some work testing out new recipes with fewer ingredients but still keeping all the flavor. Let me tell you they have done just that with this recipe. I chose to make the “All-In-One” lasagna it is fabulous and super easy to put together. They are also featuring two addition lasagna recipes: Roasted Butternut Squash and Skinny Lasagna. I had an opportunity to try the Skinny Lasagna recipe when I was asked to do a TV segment for WCRB Channel 3 in Chattanooga, the Skinny Lasagna was delicious and a big hit! I hope this encourages you to get in the kitchen and make one of these recipes they are all fantastic!
This is one of those recipes where after you make it for the first time you want to kick yourself for not making it sooner! This recipe is extremely versatile. It can easily be a delicious side to accompany any meal or it can be the main dish. You can add a number of ingredients to make this a very quick dinner. Some of my favorite things to add to this pasta are: Ham and peas, grilled or leftover chicken and frozen broccoli, sauteed onions and bell peppers or steamed squash and zucchini. I got the idea for this casserole from the very inspiring Pinterest. I happened to see a recipe that had chicken and pasta that was topped with bacon, I didn’t click on the image to get the details I just made a mental note of what some of the ingredients were so I could build my own recipe. I love to create new recipes from just seeing a picture without knowing the actual recipe. This casserole was the result and let me tell you it was a huge hit! The sauce was so full of flavor I will be making this casserole time and time again.
There is nothing better than the classic spaghetti and meatballs. It is such a great dish, I make pretty often in our house. The recipe for the meatballs is one that I have used for years and years. I learned the recipe from my mom. She never used a cookbook when she made this recipe, she knew it by heart. One day I need to ask her where she originally got this recipe from and hopefully she can remember. Growing up I never remember my mom or grandmother cooking out of a cookbook, if they did it was rare. They both always cooked from memory which always fascinated me. Don’t get me wrong, I do have a few recipes I can cook without referring to a cookbook or remembering where I originally acquired the recipe, but that’s just one or two. I would watch both of them in the kitchen successfully prepare a full Thanksgiving meal without even a peak at a recipe. AMAZING!
This week has been particularly busy for us. We are prepping for our first family vacation to the beach! Plus, work is just over the top at the moment, which will make me enjoy this trip that much more! Needless to say, I have had absolutely no time to dedicate to my blog which makes me very sad. I have tons of things to share with you, so please hang in there! With such a busy schedule this week, I have not had a lot of time to cook so this recipe was perfect! It is so easy to make, and it is also very delicious! I hope you enjoy it!
