There is a whole lot of stuff going on around here. First, I have been asked to do not one…but TWO cooking demonstrations at this year’s Nashville Home Show. Cooking demos are always so much fun for me, I really enjoy teaching people to cook a dish! Brrrr It’s cold outside! We are in the middle of winter and the temperatures are bone chilling so I decided I wanted to make a hearty soup for dinner tonight. There is nothing better than a big bowl of soup to warm your soul. I am very much a lover of all soups and it’s not uncommon for me to order soup in the summer when the temps are super high. This is my favorite recipe for white chicken chili and it is super easy to make. I love that this recipe calls for canned white beans instead of dry which makes this recipe perfect for a busy weeknight meal.
White Chicken Chili
- 2 tbsp. olive oil, divided
I owe you guys a huge apology for keeping this recipe to myself for so long. The first time I made this was sometime last summer and it is now one of my favorite go-to meals. We have it quit often and both Jacob and Lucy get super excited when they come to the table to see this fish on their plates. I love that they get excited for dinner makes me smile for sure! I came up with this recipe while I was grocery shopping and saw a box of pre-made parmesan crusted tilapia. I knew this was something I could easily re-create at home. This recipe takes no time to put together and I almost always have all of the ingredients in my pantry.
Parmesan Crusted Tilapia
This is one of those recipes where after you make it for the first time you want to kick yourself for not making it sooner! This recipe is extremely versatile. It can easily be a delicious side to accompany any meal or it can be the main dish. You can add a number of ingredients to make this a very quick dinner. Some of my favorite things to add to this pasta are: Ham and peas, grilled or leftover chicken and frozen broccoli, sauteed onions and bell peppers or steamed squash and zucchini. When I saw this post from Gimme Some Oven it went straight to the top of my list of recipes to try. What’s not to love about a quick and easy recipe right? I am constantly trying to find quick, easy and healthy meals to add to my weekly menu. This recipe is all of the above and then some and has now earned a top spot in my quick weekly meals category! 12-Minute Chicken & Broccoli

- 3 tbsp. soy sauce
- 2 tbsp. rice wine vinegar
- 1 tsp. seasme oil
If you are looking for a quick and delicious meal you can make in 30 minutes…well, my friends…this is it! I have tons of other things to blog about but this just leaped over all those! I am almost ashamed to tell you the backstory on this dish but here it is: About a million years ago, one of Gabe’s co-workers gave him a recipe for Rotel Chicken. Gabe surprised me by making it for dinner one night. He may have made it one other time as well. It was a great meal and we both liked it a lot, but for some reason, we just forgot about it. I did not make it to the grocery store this weekend so we have been pantry eating all week. Yesterday I was brainstorming like crazy to come up with a meal for tonight when this recipe came to mind. I knew I had all the ingredients on hand. There was one problem, though. Since Gabe made it, he could not remember the recipe, so here is my own personal version of Rotel!
