Baby, it’s hot outside! It’s that time of year where not even the pool water is refreshing anymore. I wanted a cool and refreshing treat, granita is the perfect way to cool off. I wanted to make this version more on the adult side and so I added vodka to this recipe. You can always omit the vodka and follow the recipe and it will still be perfect and kid-friendly. I think adding mint or basil to this would add a whole other layer of flavor. This is a very quick and easy way to beat this summer heat!

Prep Time
30 min
Ingredients
- 4 cups Watermelon juice
- 1/4 cup granulated sugar
- 1/2 cup water
- 1/4 cup freshly squeezed lime juice
- 1/2 cup vodka
Instructions
- Grab a 9x13 pan and set to the side. In a small saucepan combine the sugar, water, and lime juice. On medium-low heat stir the mixture until the sugar is dissolved. Remove the saucepan from the heat and let cool to room temperature.
- Meanwhile, add cubed seedless watermelon to a blender and puree. Using a fine mesh strainer strain the pureed watermelon into a bowl. Repeat the process until you have 4 cups of watermelon juice (about 1/2 of a seedless watermelon). Add the simple syrup and vodka to the watermelon juice and stir to combine.
- Pour the mixture into the 9x13 pan. Cover the pan with plastic wrap and place in the freezer. Freeze the mixture for about an hour. Using a fork slowly scrap the mixture (it will not be very frozen at this point). Repeat this process every 30-45 minutes. Serve in a martini glass. Store in the freezer for up to 2 weeks.
