Summer is in full swing and our family is busier than ever.  Which has caused my menu planning to well at this point what menu planning.  I haven’t planned our menu for over a month.  It’s time to get my butt in gear and to do that I actually sat down and took some time this week to get myself organized.  As I was going through my list of recipes to try I came across this delicious and easy recipe.  I already had everything I need in my pantry so it was definitely going on my menu this week.   This recipe was just what I needed to get myself back in the kitchen.  Summer is almost halfway over and there is no sign rest and relaxation in the near future, but I wouldn’t have it any other way!

  1. For the meatballs
  2. 1 pound ground beef
  3. 1/3 cup grated onion
  4. 1 garlic clove, minced
  5. 1/4 cup oats
  6. 1/2 cup bread crumbs
  7. 1/3 cup milk
  8. 1/4 cup BBQ sauce
  9. 1 tsp. salt
  10. 1/2 tsp. ground black pepper
  11. 1 tsp. McCormick Gourmet Burger Seasoning
  12. 1/2 tsp. garlic power
  13. To cook the meatballs
  14. 2 tsp. Canola oil
  15. 1/3 cup all-purpose flour
  16. Homemade BBQ Sauce
  17. 1 small onion, finely diced
  18. 1 clove garlic, minced
  19. 2 cups ketchup
  20. 1/4 cup light brown sugar
  21. 1/4 cup molasses
  22. 2 tbsp. red wine vinegar
  23. 1 tbsp. dry mustard
  24. 1 tsp. cumin
  25. 1 tsp. smoked paprika
  26. 1 tsp. garlic powder
  27. 1/2 tsp. onion powder
  28. 1 tbsp. fresh thyme
  29. Salt and pepper to taste
  30. Extra-virgin olive oil
  1. For the meatballs
  2. Preheat oven to 350 degrees. In a medium mixing bowl. Combine the onion, garlic, oats, bread crumbs, seasoning, bbq sauce and milk. Mix until well combined. Add the ground beef and mix gently until incorporated.
  3. Roll mixture into medium sized meatballs. Set the meatballs on a baking sheet. Once you have rolled all the meatballs.
  4. Place the baking sheet into the freezer for 5 minutes.
  5. Add the canola oil to a large skillet over medium heat.
  6. Remove the meatballs from the freezer and lightly coat each one in the flour. Add the meatballs to the skillet and cook just until browned.
  7. Place the browned meatballs into a baking dish. Pour about a cup to a cup and a half of bbq sauce over the meatballs and bake for 45 minutes. Serve immediately.
  8. To make the BBQ Sauce
  9. In a small sauce pan on medium-heat add the extra-virgin olive oil, onions and garlic. Sautee for 4-5 minutes until onions and garlic are tender. Add all the remaining ingredients and stir until combined. Bring the mixture to a bubble and turn the heat down to low. Simmer the sauce for 30 minutes to let the flavors come together. Sauce can be used immediately. Cool completely before storing. Refrigerate any remaining sauce in an airtight container for up to 3 weeks.
  1. I made the BBQ sauce in advance to make this meal easier.
